
Chicken Cacciatore
Simmered italian style chicken with tomato sauce
Ingredients
Seasonings and Spices
Salt - to taste
Pepper - to taste
1 tablespoon chopped parsley
1 teaspoon rosemary

Vegetables
2 tablespoon green onion
1.5lb fresh sliced mushroom
1.5 cup canned tomatoes (drained)
Other
2.5lb chicken thighs
2 tablespoon butter
1 tablespoon oil
1/4 cup chicken stock
2 tablespoon melted butter

Directions:


Heat butter and oil in a 10"skillet and brown the chicken on all sides. Transfer to a platter and keep warm.

In same skillet, sauté onions and mushrooms for 2 to 3 min until mushrooms exude the liquid they have absorbed. Add stock and cook for 3 more minutes.

Return chicken to the pan. Add tomatoes, rosemary, salt and pepper. Cover and simmer for 30 minutes.

Arrange chicken on platter, pour on the sauce and sprinkle with parsley ​

(Optional for thickening sauce)
Carefully combine butter and flour to form a paste in a small bowl. Stir it into sauce and cook 2-3 minutes​
